A ética no grande banquete: uma introdução à bioética na gastronomia

Abstract

Under the heading of the ethics in the great slap-up meal the present study it aims at to introduce the bioética reflection in the Gastronomy. It represents studies developed ahead of the basic necessity to investigate the beddings and deeper interfaces of the Gastronomy with the Bioethics. The general objective of this study is on the basis of the principles of the bioética, aspects and values implied in the Gastronomy, by means of which if they perceive its ethical interrogations and the corresponding criteria by which the Gastronomy can be evaluated and proposal. As objective specific decurrent of the method adopted in this study, that is eminently to bibliographical, we aim at to point with respect to insertion of the Gastronomy in the context amplest of the sociocultural construction of the feeding and to make the reading of some referential of the Bioethics in basic areas of the Gastronomy. The data-collecting was carried through by means of the scientific article reading, national, international publication texts and books, with sights to get current and including information on the involved areas, using the libraries of the University Center Is Camilo and the database Culinary Arts, between 1º of June of 2010 and 1º of June of 2011. By means of the carried through inquiry it was possible to evidence that the Bioethics principles of the autonomy, of the vulnerability, justice and the prudence can in such a way contribute for the understanding as for the improvement of the practical professionals of the Gastronomy.
